100% natural stock fish

Dried fish from Medstrom Fisk AB are wild caught skrei (cod) from the sea. The fish contains no additives or preservatives. This Product is the result  of a long natural drying and maturation process just as the Vikings did 1000 years ago.

The climate at Værøy is stable year-round and, therefore perfect for the production of dried fish. The best temperature for drying fish is between 0 ° C and + 5 ° C, and here in Værøy, the drying conditions are optimal. Correct amount of rainfall, plenty of wind, no frost or very high temperatures means that there are no better conditions for dry fish than here!

The fish is hung on the racks during the period February / March until the beginning of June. Then we take the fish down from the racks, stack it on pallets and place them in shelves in a climate room with ample air circulation and proper humidity.

When the fish has been in stock for a month, our selectors start their work. This is the expert in dry fish. Each fish is sorted by quality, weight and length. This work takes many years of experience and learning, so that customers around the world get what they want.

After sorting, the fish is packed or squeezed into boxes or bundles and distributed further to our markets.

Cod
Stockfish

Cod is widely sought after for its taste and delicious appearance. The flesh is moist and flaky when cooked, and bright white in color. It is well suited for drying. Categorized into Prime and Second grade.

Prime grade

Prime grade Stock fish includes Ragno, Westre Magro (WM), Westre Demi Magro (WDM), Grand Premier (GP), Lub, Bremer (BR), Hollender (HO), Westre Courant (WC), Westre Ancona (WA), Westre Piccolo (WP).

Second grade

Second grade stock fish includes Italia Grande (IG), Italia Grande Magro (IGM),
Italia Medio (IM), Italia Medio Magro (IMM), Italia Piccolo (IP).

Stock fish is packaged in 25kg cartons, 45 and 50 kg bales

Saithe
Stockfish

In Norway, saithe has traditionally been a common source of food for the coastal population. In recent years it has gained popularity in a number of countries because it is a very nutrition resource and readily available.

Saithe is sorted in length 20/40 cm, 30/50 cm, 50/70 cm, 70/+ cm.

Tusk
Stockfish

Tusk is common in the deeper fjords of Norway, on the west coast and along the continental slope. It is most common at 200-500 meters depth. Tusk is a lean fish and a good source of protein. It also contains a lot of vitamin B12, in addition to riboflavin and folate.

Tusk is sorted in length 20/40 cm, 30/50 cm, 50/70 cm, 70/+ cm.

Haddock
Stockfish

Haddock has clean white flesh that is quite firm when fresh, and it is often cooked similarly to cod. It does not respond well to salting, but it is often preserved by drying and is also widely used in processed products.

Haddock is sorted in length 20/40 cm, 30/50 cm, 50/70 cm, 70/+ cm.

Dried Cod Head
Stockfish

18% of cod weight is it head. It consists of 55% muscle mass, 20% bone, 15% gels, 5% skin and 4% eye. The protein content is up to 15%

The cod heads are dried on racks and sold to Africa, mainly Nigeria. The raw material is used in traditional dishes where dried cod head is the main ingredient.
